When I was back in Michigan visiting family, my daughter and I were looking at things from my childhood. I had this little Scholastic book called the “Book of Me”. Let me tell you my daughter had quite the giggle-fest reading this book. Mind you I wrote it when I was her age! We got to the page where it was asking about favorite foods and foods I just plain hated. Nothing made my daughter laugh harder then reading that I hated salads. “See how things change”, I told her with a devilish grin and I laughed too. I LOVE salads. One thing I LOVE the most in salads is fruit; gotta love the sweet and sour taste that tickles your mouth!
Here is a favorite winter mix for you all with pears!
Pear and Poppy Seed Winter Mix Salad
Ingredients
- 2 pears (halved, cored, cut into thin slices)
- 1/2 cup white balsamic vinaigrette
- 1 teaspoon dijon mustard
- 1 tablespoon organic sugar
- 1 tablespoon poppy seeds
- 1/2 cup extra-virgin olive oil
- 4 cups organic arugula leaves
- 4 cups organic baby spinach
- 1/2 cup raw walnuts (chopped)
- 1/2 cup raw pecans (chopped)
- 1/2 teaspoon salt
- 1 teaspoon pepper
Directions

| In a small bowl whisk together the following: white balsamic vinaigrette, dijon mustard, sugar, salt, pepper, and poppy seeds. | |

| Add the olive oil in a slow manner, continuing to whisk till the vinaigrette is thick. Set aside. | |

| In a salad bowl toss together the arugula, baby spinach, pecans, walnuts and dressing. | |
| Step 4 | |
| Once you serve the plates add in the pear slices as you see fit. | |
