Vegan Pasta Nests

CRUNCHY YUMMY pasta dishes … my daughter just loves it!

Vegan Pasta Nests


6 ounces of fettuccine pasta
1 stick of earth balance vegan butter
1 clove of garlic, minced
1/2 teaspoon of sea salt
dried basil


Cook pasta as directed. Make sure to put olive oil in the water to insure separation. Pour cooked pasta into a strainer and give this a few minutes to sit there and get drained. Grab Yorkshire pudding tins (pan) or a cookie sheet. Splitting your pasta into 6 portions, then make each one into a nest looking circle. Melt together in a pan the butter, garlic and salt together. Proceed to brush fully each nest with the mixture. Then sprinkle a generous amount of breadcrumbs and a little basil on each one. Bake at 400º for 15 minutes. Serve on a plate ready for the topping!

Here is the creative and fun part! You choose what to put in them … I went with plum tomatoes, parsley, arugula lettuce, baby spinach and raw sunflower seeds. I mixed the vegetables in olive oil and salt, then topped each one with that mixture and sprinkled it with the seeds. Like I have said before I love finding the opportunity to add raw veggies when I can. If you wish stir fry up some veggies in garlic and serve them up on top. For those of you living with meat eaters this is a great dish for them to have served with their meat (psst give them the raw stuff, they need it to clean the meat out! What I like to call counteraction!) At any rate I do hope you all enjoy this, my daughter chimes in on this as kid approved and fun too! Peas & Love!
