This makes for a great lunch adult or child (if your child is a hummus lover like mine). To make this gluten-free … just wrap it in a corn tortilla instead. Glorious!
1 bunch parsley, chopped
2 plum tomatoes, chopped
1/4 yellow onion, chopped
1-2 tablespoon lemon juice (your preference)
1/4 teaspoon sea salt
1 garlic clove, minced
hummus, store bought or homemade
tortillas, flour or corn
Mix together the parsley, tomatoes, onion, lemon juice, and garlic. Plop down that tortilla, then spoon some hummus down the center. Time to pile your veggies, lovely! Wrap up and enjoy!
