Super Easy Raw Vegan Banana Muffins … Tasty Nom-Noms for Breakfast!
If you are someone trying to integrate a higher amount of raw food in your eating, there is a necessity for some grab-n-go tasty nom-noms!
Here is a half dozen of rich yummy goodness. The perfect partner to your morning smoothie!
This has been a raw item that my daughter LOVES! So much so I have to make more just to be sure I get some, haha! Kid-Approved! These are super easy to make, just soak the nuts the night before. I hope you all LOVE these as much as we do!
Raw-YUM Banana Nut Muffin
Serves | 6 |
Ingredients
- 1 banana
- 1/3 raw walnuts (soaked, 7 hours)
- 1/3 raw almonds (soaked, 7 hours)
- 6 medjool dates (pitted)
- 1 tablespoon virgin coconut oil
- 2 Teaspoons organic maple syrup (or another liquid sweetener)
- 1/4 cup shredded coconut
- 1/2 teaspoon organic pure vanilla
- pinch himalayan salt or sea salt
- shredded coconut (decoration)
- cupcake wrappers
Directions
Step 1 | |
Toss the walnuts, almonds, and dates into your food processor. Blend until it looks like fruitcake. | |
Step 2 | |
Add in the banana, oil, coconut, maple syrup, vanilla and salt. Blend thoroughly. | |
Step 3 | |
Spoonful into cupcake wrappers. Then sprinkle some extra coconut on top. | |
Step 4 | |
Sit it in the refrigerator for a few hours to solidify. My daughter loves to eat them with a spoon and no fridge time. If you would like to dehydrate, I recommend at least 6 hours at 118 degrees. Enjoy! |

January 17, 2014Hi! I'm new to this. When you say "soak overnight," I'm guessing you mean in water right? Not in something else? Sorry for the newbie question. Nuts by me aren't cheap and don't want to waste them if I don't have to :) Thanks
