Super Easy Raw Vegan Banana Muffins … Tasty Nom-Noms for Breakfast!

This has been a raw item that my daughter LOVES! So much so I have to make more just to be sure I get some, haha! Kid-Approved! These are super easy to make, just soak the nuts the night before. I hope you all LOVE these as much as we do!
Raw-YUM Banana Nut Muffin
- 1 banana
- 1/3 raw walnuts (soaked, 7 hours)
- 1/3 raw almonds (soaked, 7 hours)
- 6 medjool dates (pitted)
- 1 tablespoon virgin coconut oil
- 2 Teaspoons organic maple syrup (or another liquid sweetener)
- 1/4 cup shredded coconut
- 1/2 teaspoon organic pure vanilla
- pinch himalayan salt or sea salt
- shredded coconut (decoration)
- cupcake wrappers
|Toss the walnuts, almonds, and dates into your food processor. Blend until it looks like fruitcake.|
|Add in the banana, oil, coconut, maple syrup, vanilla and salt. Blend thoroughly.|
|Spoonful into cupcake wrappers. Then sprinkle some extra coconut on top.|
|Sit it in the refrigerator for a few hours to solidify. My daughter loves to eat them with a spoon and no fridge time. If you would like to dehydrate, I recommend at least 6 hours at 118 degrees. Enjoy!|
