Sour Cream and Onion Raw Vegan Kale Chips

These are scrumptious to the point that they changed my daughters mind about kale. She said, ” Ok mama this is kale I will eat!” And she eats a lot of them. So this gets the kid friendly stamp.

Sour Cream and Onion Raw Vegan Kale Chips

e.g. These muffins have a crunchy top with a crumbly inside where you taste the subtle hint of lemon.

Ingredients

  • 1-1/4 Cups raw cashews (soaked; approximately one hour)
  • 1-2 organic kale (depending on how saturated you like your chips)
  • 1 Small organic yellow (chopped)
  • 2 tablespoons nutritional yeast
  • 1 tablespoon sprouted tofu or white miso
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon cayenne pepper

Directions

Step 1
Clean your kale thoroughly, then tear into smaller pieces. Personally, I rip the spines out and give them to my rabbit; they just don't dehydrate nicely sometimes.
Step 2
Aside from the kale put all your ingredients into your food processor. Blend until on the smooth side, almost like a smooth hummus.
Step 3
If you like a really coated kale chip stick to just 1 or 1-1/2 bunch of kale. Put half of the sauce in a big bowl with half your kale and rub the leaves with the sauce. Repeat with the other half. Take two cookie sheets lined with parchment paper and lay out all the pieces and they can be close.
Step 4
I use my oven for dehydrating and it seems to be different every time I do this as to how long it needs. I set the oven at 110 degrees as well as I keep the door pried open with a wood spoon. After 6 hours I check on it and peek in every hour after; this batch took 10 hours (I did saturate them in the sauce more this time). With that said I had one the other day that took 6 hours. Just leave them in there till they look dried, crispy and light. Doesn't hurt to pop one in your mouth to test. Remove when done ... ENJOY!!
