Simply Decadent Raw Chocolate Truffles



Many of us, including yours truly, made that resolution to drop some weight.

To make sure we all reach our goals it is nice to have a sinful rich treat that is satisfying and yet won’t mess up our grand weight loss plans. Trust me they are delicious , but in a healthy way not in a binge on all 20 truffles delicious.

You will curb that craving! Kid approved too!


Simply Decadent Raw Chocolate Truffles

Serves 20
Prep time 3 hours


  • 2 Cups raw cashews (soak at least 2 hours in filtered water)
  • 1/4 cup raw cacao or cocoa (unsweetened 100%) powder (raw option = cacao)
  • 1/4 cup organic maple syrup or agave (raw option = agave, but maple syrup is high in minerals)
  • 3 organic medjool dates
  • 3 Tablespoons raw coconut oil (cold-pressed)
  • 2 Teaspoons vanilla
  • 1 teaspoon pink himalayan salt
  • list of topping options in the steps below


Step 1
Blend all the ingredients in your mini food processor. Make sure mixture is smooth and creamy in appearance.
Step 2
Divide mixture into at least 20 portions. Roll each portion in your palms in a ball shape. Place on a platter and put in the refrigerator for 10 minutes.
Step 3
Select your toppings; pick at least 3:

pomegranate powder, lucuma powder, chai flavor (mix cinnamon, cardamon, vanilla powder in a 2:1:1 ratio), bee pollen, cacao nibs, cacao powder, cocoa powder (unsweetened 100%), raw chopped nuts, goji berries or coconut flakes (mix with vanilla powder)

You can mix these, do truffles in half of one or another, or just do them straight. Have fun with it!
Step 4
Prepare small plates with the toppings. Pull the truffles out of the refrigerator. Roll each one in the toppings of your choice and place on a lovely plate or in a tin lined with parchment paper.
Step 5
Store in the refrigerator for up to 2 weeks or the freezer for up to 6 months. Enjoy!
