Raw Vegan Chocolate Coconut Energy Balls
Ingredients
1/4 cup cold pressed coconut oil, room temperature
1/4 cup organic maple syrup
1/3 cup organic cacao or pure cocoa powder
pinch of sea salt
1 cup raw pecans or walnuts, soaked and dehydrated
2/3 cup organic shredded unsweetened coconut
Directions
In a bowl, mix together the coconut oil, maple syrup and cacao powder. Stir and press the oil till its thoroughly blended. Toss the remaining ingredients in and stir together. Layout a sheet of wax paper on a plate. Then with your hands form into 3/4-inch round balls. Freeze each plate full for 15 minutes. To preserve them nicely keep them refrigerated. Makes approximately 16 pieces. Enjoy!

February 5, 2013Thank you! As far as a replacement for the coconut oil, safflower oil I have heard can replace coconut oil, but I haven't tried it. I will try it and report back to you! The replacements I have tried is palm oil and cacao butter, those both work well in the recipe. Please let me know how it works for you!

February 5, 2013I made these tonight and they are delicious! I ended up buying coconut oil (I had never used it before so I didn't realize it was a totally different consistency than other oils) and everything came together great. Thanks for the recipe! :)
