Ooey Gooey Chocolate Pumpkin Pie

This is the healthy, but sinfully yummy dessert I made last night. My recipe for Ooey Gooey Chocolate Pumpkin Pie; I am sure it isn’t surprising that this is kid approved.

Ooey Gooey Chocolate Pumpkin Pie


2 cans organic puréed pumpkin
1 cup oatmeal
1/4 cup flax seeds
3 tbsp canola oil
2 teaspoon pure vanilla extract
1/2 teaspoon baking soda
2 teaspoon aluminum-free baking powder
1 teaspoon of cinnamon
1/2 teaspoon salt
1 cup of organic coconut sugar
1 cup vegan chocolate chips, carob chips or cacao nibs


Mix all the ingredients together thoroughly except chips; at least 2 minutes. Mix in chips, and pour into an oiled pie dish. Bake at 350 degrees for 45 minutes. Let stand at least 30 minutes before cutting. Make the slices petite since this is deliciously rich. Enjoy!
