Knee-Buckling Vegan Grilled Cheese

I have discovered another fantastic vegan cheese that is OOEY-GOOEY, soy-free, casein-free, gluten-free and NON-GMO!

GO VEGGIE line of truly VEGAN cheese products. So I had to try this out and made this amazingly DELISH vegan grilled cheese that is seriously sinful. This is VERY VERY kid approved!

Here it is LOVELY … a recipe to completely indulge yourself in:

Knee-Buckling Vegan Grilled Cheese

Serves 4
e.g. These muffins have a crunchy top with a crumbly inside where you taste the subtle hint of lemon.


  • 4 Tablespoons vegan butter (earth balance buttery sticks recommended)
  • 4 Ounces vegan cream cheese
  • 1-1/4 Cups GO Veggie Mozzerella Shreds
  • 2 Tablespoons fresh rosemary
  • bakery style french or italian bread
  • organic baby spinach
  • vegan butter spread


Step 1
Puree together in your food processor the 3 tablespoons of butter, cream cheese, mozzarella, rosemary, salt.
Step 2
Take your slices of bread and spread one side with the butter spread. Place them a pan until its crispy and golden brown on one side only.
Step 3
Turn on your broiler and pull out a cookie sheet.
Step 4
Place the bread on the cookie sheet with the un-fried side facing up. Generously spread your mixture on the bread.
Step 5
Place under the broiler till the cheese mixture starts turning a golden brown.
Step 6
Place a handful of the spinach in the sandwich and close it up. Enjoy this knee-buckling sandwich. Makes about 4 sandwiches, you can easily make one and store for another day. I would recommend NOT storing longer than 3 days.
