Easy Raw Vegan Zucchini Noodles with Savory Tomato Sauce

Zucchini noodles … best raw food creation ever, next to raw chocolate of course!

This meal is so satisfying and filling it blows my mind. Portion it out based on your hunger level and it will do well in the refrigerator for 3 days. (hasn’t lasted any longer than that in my house so it may last longer hehe)

Here is how I handle making my zucchini noodles:

Zucchini Noodles

Ingredients

  • 3 organic zucchini (peeled, topped & tailed)
  • flax oil
  • pink himalayan salt

Directions

Step 1
Take out your spiralizer and setup your first zucchini. Run all the zucchini through making your noodles. If you don't have a spiralizer, you can make slices with a knife, mandolin or peeler.
Step 2
Sprinkler the noodles with salt and oil. Massage the noodles nicely, then set them aside for a few minutes.
Step 3
When you return to your noodles even 5 minutes later you will notice they are softer and not as springy. Giving more of a cooked feel or texture. Squeeze them a bit, then pour the excess out of the dish.

After you have those ready, time for the sauce!

Raw Vegan Zucchini Noodles with Tomato Sauce

Ingredients

  • 3 organic tomatoes (quatered)
  • 4-5 sun dried tomatoes (soaked)
  • 2 garlic cloves (chopped)
  • 1 shallot (chopped)
  • 5 sweet basil leaves
  • 1/2 teaspoon pink himalayan salt
  • zucchini noodles
  • romaine lettuce

Directions

Step 1
This sauce should blend fabulously in a small food processor.
Step 2
Blend all the ingredients together till everything is blended well. If you chop and mince everything previous it should be quite speedy!
Step 3
Line your plate with some beautiful greens, a layer of zucchini noodles, then an exquisite dollop of tomato sauce. Enjoy!

If you want a little extra to top it off with try this:

Raw Vegan Parmesan

Ingredients

  • 1 cup raw brazilian nuts
  • 1/4 cup nutritional yeast
  • 1 teaspoon pink himalayan salt

Directions

Step 1
In your small food processor, pour in the nuts. Blend on the chop setting till it appears minced.
Step 2
Pour the nuts in a bowl. Now mix in the rest of the ingredients with a fork. Top to any raw or just vegan dish that you want that parmesan texture. Enjoy!
