Crispy n' Chewy Chocolate Chip Cookies with a Protein Punch! (vegan, gluten-free)

Who can resist Chocolate Chip cookies? NOT ME nor my daughter!!

She LOVES these, so obviously kid friendly. These are a creation that came out of my experimenting with almond flour … welcome to my mad scientist lab! LOL

Seriously, these are divine … they sure didn’t last long in my house so I figured I must share with you all! Enjoy!

Crispy n’ Chewy Chocolate Chip Cookies with a Protein Punch!

e.g. These muffins have a crunchy top with a crumbly inside where you taste the subtle hint of lemon.

Ingredients

  • 2 1/2 Cups almond flour
  • 1 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1/2 Teaspoon cream of tartar
  • 1 1/2 Cups turbinado raw sugar
  • 1 cup vegan butter (e.g. Earth Balance)
  • 1 teaspoon organic vanilla
  • 1/4 cup pumpkin puree
  • 1 bag vegan chocolate chips

Directions

Step 1
Beat together sugar, vanilla, butter and pumpkin puree.
Step 2
Add in cream of tartar, baking soda, salt. Mix well.
Step 3
Slowly beat in the almond flour and continue until it has a well combined appearance.
Step 4
Stir in the bag of chocolate chips.
Step 5
Drop one inch spoonfuls onto your greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes or till golden brown.
Step 6
Pull out your pan and let it cool for a few minutes on the pan. Then you can easily remove them and place them on a paper towel or plate. If you eat right away they will be crispy, but if you wait they will get chewy when cool. Enjoy!

Basically any cookie with chocolate I love, but I have to say vegan chocolate chip cookies dunked in almond milk is awesome!
