Chia Pudding in the Morning


Good Morning Lovelies! The fuel for today was Chia Pudding …

This is a simple recipe that takes a little planning just from the mere fact you have to throw it in the fridge to soak the night before. Not a biggie! Chia seeds have a massive range of health benefits as well as they take on the flavor of what they are mixed with.

– thyroid conditions
– hypo-glycaemia
– diabetes
– IBS
– celiac disease
– acid reflux
– lowering cholesterol
– reducing blood sugar

When soaked these little seeds become a tapioca style texture and create a gel like surrounding.

Chia in the Morning

Ingredients

1/3 cup of chia seeds, don’t rinse
1 cup of almond milk
2 tablespoons of coconut sugar (or any preferred sweetener)
1/2 teaspoon of cinnamon
small handful of raw pecans, shredded coconut, dried fruit of choice

Directions

In a closed container, mix the chia seeds and milk. Set in the fridge overnight. In the morning, open the container and stir thoroughly. Add the rest of the ingredients and mix well. When I serve this I always sprinkle on top a little more coconut, nuts, dried fruit. Serves 2, unless you are very hungry. Chia seeds are very filling. I typically save a dish for my daughter for an after school snack! Enjoy!
