Banana Cream Pie Pancakes (vegan, gluten-free)

Want decadence for breakfast? Making brunch for non-vegans? Make this!

This is a very easy pancake recipe that does not taste gluten-free, but it is. Doesn’t taste vegan, but it is. Please let me know what you think in the comment section below. Do I even need to say kid approved, haha!

Banana Cream Pie Pancakes (vegan, gluten-free)

e.g. These muffins have a crunchy top with a crumbly inside where you taste the subtle hint of lemon.


  • ~ PANCAKES ~
  • 1-1/4 cup rice flour
  • 1 tablespoon organic sugar
  • 2 tablespoons aluminum-free baking powder
  • 1/8 teaspoon salt (himalayan pink salt)
  • 1 cup almond milk
  • 1 banana (ripe)
  • 1/2 tablespoon vanilla (organic, pure)
  • ~ SAUCE ~
  • 1 banana
  • 2 teaspoons vanilla
  • 1 Package Daiya vegan plain cream cheese style spread
  • 1/2 cup organic sugar
  • organic maple syrup
  • bananas (sliced)
  • walnuts (chopped)


Step 1
Let's get our pancake batter done. Grab a large mixing bowl and toss in all the ingredients under the "pancake" title. Use your electric mixer to thoroughly blend.
Step 2
Lightly oil a saucepan and place on medium heat. Depending how large you want the pancakes, use 1/2 cup or 1/4 cup to dopple the batter into the pan. Cook each pancake till its golden brown on both sides.
Step 3
Sauce time! Use a small food processor to blend the ingredients`under the "sauce" title. Add all the ingredients at once; I love recipes that you just toss it all in! Use a spoon to make sure everything is well blended.
Step 4
Place a pancake on the plate. Top it with a layer of slices of bananas. Pour on some of the yummy sweet creamy sauce. Add another pancake on top. Pour on some more sauce, sprinkle with some walnuts, and drizzle the maple syrup. Enjoy! You are in for one decadent breakfast. Makes 4-8 pancakes and serving 2-4 persons.
