What’s for Dinner? Try this last minute, fast, but delicious black bean dish.

Southwest Vegan Black Beans

Ingredients

1 can of organic black beans, not rinsed
1 can of organic corn, drained
1/2 medium yellow onion, minced
1 clove of garlic, minced
1 teaspoon of cumin
juice from 1 lime
1/2 teaspoon of salt
2 organic plum tomatoes, chopped

Directions

Throw the onion and garlic in an oiled saucepan. Sauteed till onions start to get translucent. Toss in the cumin and salt. Stir till fragrant. Add the black beans and corn, then stir for approximately 2 minutes; basically wait for it to heat up well. Right before you are done, mix in the lime juice. After you place in a serving dish add the fresh tomatoes to the top. I love keeping a little of a dish raw, if possible. Serve with rice, crackers, bread or tortillas. Serves 3-4 and kid approved! Enjoy!
